During Масленица Butter Week блины pancakes are the principle dish. They are made every day during the week. Russian housewifes would make them from wheat flour, buckwheat, oats or cornmeal. Watch how to make light and fluffy блинчики.

Typical Russian блины pancakes are тонкие thin and very much like crepes, which are of course French in origin, but блины are even тоньше thinner. It’s said you can read a newspaper through a good блинчик. Тесто для блинчиков Batter is mixed up smooth, unlike American-style pancake batter which can be с комками a bit lumpy.

Break eggs into миску a bowl. Add две столовых ложки сахара two tablespoons of sugar. As you pour the batter into the pan, twirl the pan around. If you put in too little batter to begin with, you can pour in some extra batter to fill in the gaps. You can either slip the spatula under блинчик and flip it with a quick twist or pick up the edge of the блинчик with your fingers and flip it over with no spatula. After the second side has cooked for thirty seconds, slip it out of the pan onto a plate.
